This evening, Jimmy wanted something different in a snack…he did not know what he wanted so it was up to me to create something to satisfy his taste buds.
I had already boiled eggs for the regular deviled eggs for Easter Sunday.
Jimmy likes jalapenos, he likes cream cheese, likes butter, and boiled eggs.
Simple.

I took some room temperature butter and mixed it with cream cheese. I find the two go together quite well and it’s easier to blend in other items such as strawberry jam if you want to spread it on toasted muffins.
This evening, instead of the strawberry jam, I substituted the jalapeno relish and mixed it with butter and cream cheese. Spread the mixture on some saltines, and you’ll find the results a little sweet and yet a little zingy.
I glanced over at the boiled eggs and decided to stuff a couple of the eggs with this jalapeno mixture.
Delicious.
I then took the yokes and mixed them with the jalapeno mixture and stuffed another egg.
Fantastic.
Served him this creation and had a happy husband.
Tomorrow, the deviled eggs may be stuffed with this jalapeno/yoke/butter/cream cheese mixture instead of the normal mayonnaise, mustard, onion, sweet relish style.
